Bike Party '09

More community service: Keith organized a "Neighborhood Bicycle Party" for our neighborhood(s) last weekend. The goal was to increase bicycle use and awareness in our immediate areas. There was a professional bike guy from Earl's, and representatives from Local Motion and the South Burlington Police Department. Free bagels, a bike gear swap, and it all capped off with a bike parade through the neighborhood! It wasn't the turnout we expected (maybe due to the holiday weekend), but there were still good numbers; enough for us to think about doing it again next year!

I didn't get a lot of pictures because I wasn't there most of the day, but here is a good one of Lili on one of my old bike rim chairs:

One of the many benefits of staying home with Lili and not having a "real" job is this:

pancakes with nutella and strawberries

I (usually) don't have to rush out the door in the morning, and I can take a little time to make an exceptional breakfast. In fact, the pancakes were made a few days ago and have been reheated. I don't know what made me think of this great combo this morning, but I'm glad. And my belly is too.

Oh, and yeah. I'm ready to fully admit that my life revolves around food. For now, anyway. But, 16+weeks in, and I've only gained a few pounds! We listened to the baby yesterday and it sounds good. It even kicked once during the dopplar. I'm not throwing up anymore (knock on wood) and slowly coming out of the mega-funk that was the first trimester. It helps that the weather's great and that our garden is well under way to providing some fun veggies.

Kids in the Kitchen

I know, I know. You're thinking "Kids in the Kitchen? Must be a disaster". Frankly, sometimes it is. But you know me well enough to know that we've been baking with Lili since she was just a few months old!

This MOMS club series that I've started involves making basic recipes with a group of kids. Mostly, I do most of the prep work, and the kids get to do the fun part. Last time it was muffin mix-ins. This time, we made SOFT PRETZELS. I don't know what gave me the inspiration to do so, but hallelujah. They were delicious. I'm seriously considering making another batch this evening. I could have eaten 5 of them, easily. Straight out of the oven. The smell and texture was just incredible. Perhaps even better than Auntie Annes.

Anyway, get the recipe here. Try it with cinnamon sugar or sesame seeds instead of salt.

And hey... at least this wasn't strictly a food post!

Key Lime Yummy

I'll have... yummy.

A while ago, my friend Anna and I had a discussion about Key Lime Pie. It's one of my favorite desserts EVER, and she happened to be there when it became my favorite, though I doubt she remembers this (it was the1997 swim trip to FL). Since our conversation, my craving has built and built to it's breaking point: this morning. Actually, the breaking point was probably Friday evening, but I was able to quell the crave with an eclair.

It turns out Key Lime pie is surprisingly easy to make. Very few ingredients (compared to the crap I'd have been willing to eat from the supermarket!), and a quick baking time. I'm definitely happy to discover how easy it was to make, but not so keen on how quickly I seem to be able to devour it. By the way... I know Key Lime Pie usually is topped by whipped cream, but a meringue top was lower-fat and it helped me used the egg whites leftover from the filling!

Key Lime Pie with Meringue

3 egg yolks
zest f 2 limes
14oz can sweetened condensed milk
1/2 cup lime juice (juice the limes used to zest, and then supplement with Key Lime Juice)

3 egg whites
1/2 tsp vanilla
pinch salt
1/4 tsp cream of tartar
1/4 tsp cornstarch
6 Tbs sugar

Heat oven to 350F. Beat egg yolks with zest for 3-5 minutes. While beating, drizzle in the condensed milk. Beat in the lime juice until just combined. Pour filling into a 9-inch graham cracker pie crust, and bake for 15 minutes.

Meanwhile, beat the egg whites, vanilla, salt, cream of tartar, and cornstarch for 1 minute, until soft peaks form. While beating, slowly add the sugar and beat until stiff glossy peaks form, 4-5 minutes. Spread the meringue on the hot pie, taking care to seal the edges. Return to oven and bake for 12-15 minutes more, until the meringue is browned on top.

Food blogs

Food blogs. There are the good, the bad, and the ugly. Then there are the beautiful and mouthwatering. I stumbled upon this site ( while looking for an easy recipe to use for Kids in the Kitchen next week. And I'm in love. I think I could spend hours poring over each recipe and I'm in awe of the blog writer. And jeez louise, how HOW can I get pictures of the food I make to look that GOOD. Click there if you dare.

Magic Chocolate Ice Cream

Yesterday we made "Magic Chocolate Ice Cream" with my BFF, G. It is magic because you don't need an ice cream machine to make it, and it tastes better than any store bought ice cream. It takes 10 minutes to prepare, and it is very very good. And it makes a whole quart! Beats a measly B&J pint! But, it doesn't take much magic to get a 2.5 year old to LOVE it!

Magic Ice Cream, from Cook's Country June/July 2009

Makes 1 quart

1 tsp instant coffee
1 Tbs hot water
4 oz bittersweet chocolate, broken into pieces
1/2 cup sweetened condensed milk
1/2 tsp vanilla extract
Pinch salt
1 1/4 cups cold heavy cream

1. Melt Chocolate Base. Combine coffee and hot water in a medium bowl. Let stand until coffee dissolves. Microwave chocolate, sweetened condensed milk, and coffee mixture in bowl, stirring every 10 seconds, until mixture is melted, about 1 minute total. Stir in vanilla and salt. Let cool.

2. Mix and freeze. With an electric mixer on medium high, whip cream to soft peaks, about 2 minutes. Whisk one third of whipped cream into chocolate mixture, then fold the remaining whipped cream into chocolate mixture until incorporated. Freeze in an airtight container until firm, at least 6 hours or up to 2 weeks.

Cooks notes: This recipe is VERY child friendly, and pretty much fool-proof. It's hard to over-beat the cream. I didn't let the chocolate mixture cool before adding the cream. I forgot the vanilla until the folding step, and forgot the salt entirely, and it was all still delicious. 3 contestants can vouch for that! Although, we agree that it tasted more like coffee ice cream than just chocolate, so in the future, I'll omit the coffee to make it more kid and Keith friendly!

Go Mommy!

Last year, Keith and I rode the NYC 5 boros tour with a bunch of friends from Ithaca. This year, we registered together again, with the addition of my Mommy!

Unfortunately because I was (am) so sick for the 1st trimester, I was unable to train for anything besides the lay-on-the-couch olympics, and so I had to bow out of the ride. But, my mom decided to still do it, and despite the 50 degree rainy day, she had a good time and even reports that she was not sore at all afterward! I hope to be able to do the ride with her in a couple of years. Maybe by then Lili will even be able to join us!

I'll have another!

Baby, that is... Yes, we are having another baby! And I have not really been in the right mood to post about it because the first trimester has been pretty rotten, and I haven't been so happy about being pregnant, and I didn't want to bring anyone down by ranting about it here.

But now that we're past 14 weeks, and the nausea is passing, and I can actually already feel the baby, and all our friends and family pretty much know, I thought maybe it's time to spread the joy.

The baby is due at the end of October, and we won't be finding out the gender beforehand. I have an inkling it's a boy, but I'm not the greatest guesser in the world so maybe it won't be! Lilian is very aware of the new presence and she talks about the baby a lot. She hopes for a sister, but she understands it could go either way. Although she likes to with hold hugs and kisses from me, she happily dispenses them to the baby (my lower abdomen).

It amazes me how different it has been this 2nd time around. My body is already showing, mostly because my stomach and other organs have already shifted upward in anticipation of the squeeze. I've been a lot sicker than I was with Lilian, but in totally different ways. I have said to Keith over and over that we likely won't have any more kids, because I don't think I can live through another 1st trimester like that one was. Hopefully it will be pretty smooth sailing from here on out!
